Chicken Quesadilla

The origin of the quesadilla was in the Mexico. A quesadilla is a wheat tortilla or corn tortilla with a savory blend filled with cheese and other ingredients or vegetables, usually cooked on a plate and then folded in half to form a crescent shape. The quesadilla is a regional favorite in the south-western United States, where it is analogous to a “cheese sandwich.” It is prepared in a similar manner except for the inclusion of local ingredients, and sometimes turkey. A flour tortilla heated in a pan, then reversed and covered with grated cheese melting (cheese quesadilla) such as Monterey Jack, Cheddar or Colby Jack cheese, and other ingredients, like sprinkled ground beef, peppers, onions and guacamole can be added, then folded and served.

Ingredients
  1. ➢ 1 1/2 cups shredded Cheddar cheese
  2. ➢ 1 cup diced cooked chicken
  3. ➢ 1/3 cup salsa
  4. ➢ 8 flour tortillas (8 inch)
  5. ➢ Cooking spray
  6. ➢ Sour cream, if desired
  7. ➢ 1 cup Avocado , chopped
  8. ➢ 2 tablespoons Olive oil
  9. ➢ 1 cup green Scallion , chopped
  10. ➢ 1 cup boiled corn
  11. ➢ 1 cup squash purée
Instructions
  1. 1. In medium bowl, mix cheese, chicken, green scallion, corn , avocado 1/3 cup salsa and the squash purée.
  2. 2. Sprinkle tortilla with cooking spray on one side; place sprayed side on a 10-inch pan. Operates with a quarter of the chicken mixture. Top with another tortilla; spray the top of the tortilla with cooking spray.
  3. 3. Golden brown over medium heat for about 2 minutes or until. Turn quesadilla with more care; cook 1-2 minutes or until golden brown. Repeat with the remaining tortillas and chicken mixture. To serve, cut into quarters quesadillas. Serve with salsa and sour cream.
